When weeknights feel full and your brain is juggling a million things, having a few go-to meals in your back pocket can make all the difference.
So today, I’m sharing four of our favorite low-carb dinners. All four options are family-approved, quick to prep, and blood sugar supportive.

Dinner Idea #1: Breakfast for Dinner
Simple, comforting, and always a hit!
Think:
- Scrambled eggs with sausage or bacon
- An omelette packed with spinach, mushrooms, or cheese
- A side of avocado or berries

Bonus if you add healthy fats like butter or olive oil to support blood sugar balance!
Dinner Idea #2: BLTs in Lettuce Wraps
All the flavor, none of the bun or processed carbs that can make it challenging to stay balanced.
Layer crispy bacon, tomato, and lettuce with a swipe of avocado mayo in big romaine or butter lettuce leaves. Easy, fast, and satisfying!

Dinner Idea #3: Bunless Burgers
Skip the bun, which can be surprisingly high in carbs (~30 grams)—without skipping any of the flavor!
Top your burger with cheese, pickles, mustard, and avocado. Serve with a side of roasted veggies or a simple salad.

For a time-saving tip, be sure to grab pre-made grass-fed burger patties at your local store!
Dinner Idea #4: Cauliflower Rice Stir Fry
This one’s in regular rotation in our T1D house!
Use frozen or homemade cauliflower rice, then toss in chopped onion, peppers, and your favorite protein—like shrimp, chicken, or ground turkey. Add a splash of coconut aminos instead of soy sauce, and you’ve got a quick, low-carb stir fry packed with flavor.

Don’t be afraid to use up what’s in your fridge! This low carb stir-fry is very forgiving so if we have 1/2 onion sitting around or a little bit of green peppers left, I’ll toss them in!
